This is a semi-soft, ripening goats cheese made from raw milk produced by a small herd of goats here at the dairy.

It’s salt rubbed and matured for 3-6 weeks and is made slowly, hand-ladled into moulds and has a white penicillium rind.

Tasting Notes

It can eaten young, when light and smooth textured or ripened to develop a soft runnier body and more full flavour with more botanical notes of goaty flavours coming through – depending on the batch. Either way, it will have a marked length of flavour.

Works well with herbs like Basil, Thyme and Caraway, also Nut oils, Beetroot, Roasted Vegetables & Tomatoes.

Goes particularly well with gin.
